Our Story
Rooted in Puglia.
Open to the World.
A farmer’s son who trained in Rome and returned to the land. A team that believes the best meal you will ever have is the one cooked in your kitchen, with ingredients harvested that morning.
The Chef
Chef Domenico Bianco
Domenico grew up on the family Masseria, which had belonged to his maternal grandfather and, having passed to his grandmother and then to his mother, became the Masseria Bianco. He grew up looking after the olive trees and cows alongside the rest of the family, and helping his grandmother Antonetta keep the fire going in the kitchen from sunrise to sunset. Food was never separate from the land. It was the fruit of the land itself, brought to the table.
After training at the Accademia Italiana Cuochi Professionisti in Rome and spending time in the kitchens of the capital’s renowned restaurants, he made a conscious decision, together with his partner: to return home. Not to open a restaurant, but to bring the restaurant directly into his customers’ homes. The expertise he had honed over the years, he would now share in the most intimate setting possible: the dining room of anyone who truly desired it.
PugliaKitchen was born from that choice. A private chef service that carries the full weight of Apulian culinary tradition, the rigour of professional training, and the warmth of a family that never stopped cooking.
“Your kitchen. My knowledge. Our menu.”
The Source
Masseria Bianco
Many of the ingredients that arrive at your table begin at Masseria Bianco, the family farm where Domenico was born. One hundred hectares of Apulian landscape, worked by the same family across generations.
The masseria produces mozzarella, burrata, scamorza, ricotta, and canestrato using milk from the herd, alongside seasonal fruits and vegetables and oil pressed from ancient olive groves. When Chef Domenico arrives at your kitchen, he brings that place with him.
Our Philosophy
“We do not import an idea of Puglia.
We bring the actual thing.”
The olive oil in your dish was pressed from trees older than any restaurant in Italy. The fresh mozzarella was made the morning before we left. That is not a promise. It is simply how we have always worked.
The People
The PugliaKitchen Team
Every experience is built by a team that has worked together long enough to move in silence and read a room before a guest even sits down.
Domenico Bianco
Chef & Founder
Born at Masseria Bianco, trained in Rome, forged in the capital's professional kitchens. Domenico returned to Puglia to bring the experience to you, not you to it. Every dish he serves carries the land he grew up on and a grandmother's fire that never went out.
Antonello
Cook & Disciple
Domenico's youngest disciple and a natural talent in the kitchen. Antonello pairs a deep respect for traditional Puglian cooking and artisan bread-making with a youthful spark of creativity, always honouring the ancient techniques that give our cuisine its soul.
Bea
Backoffice Manager
The driving force behind every seamless experience. Bea coordinates bookings, engages directly with guests, and makes sure every detail passes through her capable hands before, during, and after each event. When everything runs smoothly and no one notices, that is her work at its best.
Eddy
Team service manager
A true ambassador for Puglia with a background in languages and international tourism. Eddy turns every service into a story, guiding guests through the flavours and the people behind each dish with care, professionalism, and a warmth that turns a meal into a lasting memory.
Giangiacomo
Digital Architect
The team calls him UomoMacchina, and the name fits. Giangiacomo designs and builds the digital systems behind PugliaKitchen, from the website to the booking tools the team uses every day. His craft is making technology disappear, so that only the experience remains.
Miriam
Logistics Manager
From sourcing the morning's ingredients to loading the van and arriving on time, Miriam orchestrates every logistical detail that makes our experiences possible. If something needs to be somewhere at a certain time, she is the one who makes it happen.
Luca
Ambassador of Puglia
More than a waiter, Luca is an Ambassador of Puglia. With genuine passion for the territory and its traditions, he turns every service into a cultural journey, sharing the stories behind the dishes, the producers, and the land that shaped them all.
Francesca
Event consultant and celebrant
The one who planted the seed for PugliaKitchen. A passionate wedding celebrant with a decade of experience in events across Puglia and Italy, Francesca is often the first voice guests hear and the reason they feel looked after long before they even sit down.
Annalisa
Ambassador of Puglia
The bright, welcoming presence of our front-of-house team. As an Ambassador of Puglia, Annalisa brings a warmth and natural kindness that make every guest feel at home from the very first moment. Her smile is the detail guests remember long after the last course is served.
“The best way to understand what we do is to sit at the table. Everything else is just a description.”
Chef Domenico Bianco
