It is a living, breathing farm where the day begins before dawn with the sound of roosters, the lowing of cattle, and tractors rolling in and out. This is where Chef Domenico's family has worked the land since 1963, and where his mother Irene still runs the dairy alongside cheesemaker Nico every single morning.

Our Family, Our Land

In 1963, Nonno Vincenzo and Nonna Antonetta built the foundations of this masseria. When Vincenzo passed just two years later, grandmother and daughter Irene carried on alone: tending the olive trees, the almond groves, a handful of cows, and the animals of the farmyard. In 1977, Irene married Franchino, and together they expanded the farm one step at a time. Their sons Domenico and Vincenzo grew up among the fields: digging potatoes, harvesting legumes, picking olives, cherries, and almonds, while Nonna prepared lunch for everyone. Today, the masseria spans 100 hectares, with 150 Friesian cows, 50 Ionian goats, 2,000 olive trees, and thousands of almond and cherry trees. A working estate with permanent and seasonal workers, where every labourer receives part of the production for their own family.

From Morning Milk to Fresh Mozzarella

The dairy lives inside the masseria. Mamma Irene and cheesemaker Nico work the milk every morning. No preservatives, no stabilizers: from fresh milk to cheese in a matter of hours. Fresh Morning Milk

The day begins before dawn. The cows are milked, and the fresh milk goes straight to the dairy. Within hours it is transformed into ricotta, still warm and delicate, draining slowly in its traditional molds.

The Art of Stretching

Nico works the curd with hot water and a wooden paddle, stretching and folding until the texture is just right. Each gesture has been refined over years of daily practice. During your visit, he will guide your hands through the same motions.
